Delicious Pasta Salad Recipes

Pasta salads are mouth-watering side dishes that are loaded with fresh vegetables and therefore, provide you your daily dose of nutrition along with satisfying your taste buds. Whether you are organizing a party or simply cooking for your family, here are two pasta salad recipes to prepare flavorsome salads as per your choice.

Greek spinach pasta salads using feta and beans

Green Spinach PastaThis delicious salad is filled with protein-packed beans and feta is perfect recipe for vegetarian kids and adults.

Servings – 6

Prep time – 25 minutes


  • 5 ounces of fresh finely chopped spinach
  • 12 ounces of canned beans, rinsed and drained
  • 4-5 ounces of crushed feta cheese
  • 2 chopped green / red onions as per your taste
  • 2 cloves of garlic, crushed
  • 1 teaspoon lemon peel
  • 2 to 3tablespoon lemon juice as pre your taste
  • 3 tablespoon olive oil
  • 1 tablespoon fresh oregano or oregano flakes
  • 1 tablespoon sliced thyme
  • Salt as per taste
  • Freshly ground black pepper as per taste
  • 15 ounces farfalle pasta
  • Shaved parmesan or pecorino Romano cheese

Directions to prepare

  • In a large serving bowl mix in all the ingredients except the pasta. Cover and leave it at room temperature up to 2 hours; stirring it occasionally.
  • Cook pasta as instructed, drain the pasta reserving ¼ cup of the cooking water. Mix cooked pasta and pasta water with spinach salad.
  • Serve it warm or at room temperature. Garnish with parmesan cheese.

Chicken pasta salad with fried shallots

Chicken PastaServings – 6

Prep time– 25 minutes


  • ½ pound pasta
  • 2 cups or approximately 5 ounces of thinly sliced shallots
  • 2 cups vegetables oil
  • Salt as per taste
  • 1 rotisserie chicken, meat shredded
  • 1 finely sliced cucumber
  • 8 to 10 finely sliced radishes
  • 2 finely sliced carrots
  • 1 bunch of cilantro, chopped
  • Fresh juices of 2 limes
  • 1 tablespoon honey
  • Pepper as per taste

Directions to prepare

  1. In a large boiling pot, add a teaspoon of salt and cook the pasta as instructed. Drain and run cold water.
  2. In a medium saucepan, boil the oil and cook the shallots over medium heat, stirring them until golden. This will take approximately 18 to 20 minutes. Move them to paper towels to drain; add some salt to them. Reserve ¼ cup shallot oil.
  3. In another large bowl combine the chicken, cucumber, radish, carrots, cilantro and pasta.
  4. Mix the lime juice and honey with the reserved oil and add salt and pepper. Sprinkle over the salad, season with salt and toss. Top with fried shallots.
